My goal for April’s Low Carb Cocktail was to create something that can easily be replicated with simple ingredients we already have in our home. Since getting to the grocery or liquor store is a little harder this month, I put together three low carb recipes to recreate while we are stuck inside. PLUS, one lucky person will win $100 by entering my #CupOfOjCockailChallenge below!
These recipes include either tequila, vodka, or bourbon, with variations of lime, lemon, or grapefruit juice, a hint of mint, stevia simple syrup and a few splashes of sparkling water. See my steps for making stevia simple syrup toward the bottom of this blog post.

my three April low carb cocktail recipes:

Lemon Drop Martini
What you’ll need:
- 120 ml (1/2 cup) vodka
- 60 ml (1/4 cup) stevia simple syrup
- 1 1/2 tbsp lemon juice strained
- Lemon slices for garnish
How to make:
- Mix vodka, stevia simple syrup, and lemon juice.
- Chill for 30 minutes.
- Garnish with lemon slices.
- Enjoy!
Sparkling Lime Paloma

What you’ll need:
- 1.5 ounces of silver tequila
- 1 ounce of grapefruit juice
- Sparkling water (enhance the flavor with Lime flavored sparkling water)
- Lime for garnish
How to make:
- In a cocktail shaker, combine tequila, grapefruit juice, and a squeeze of lime.
- Shake for 5-10 seconds.
- Strain liquid over ice into your glass.
- Top with sparkling water and a lime wedge.
- Enjoy!
REFRESHING MINT JULEP

What you’ll need:
- 3 oz. of bourbon
- 2 tbsp. of mint stevia simple syrup (add a few sprigs of mint to your pot of stevia simple syrup while it boils)
- Splash of sparkling water
- Sprig mint for garnish
- Crushed ice
How to make:
- Combine bourbon and mint stevia simple syrup.
- Pour over crushed ice.
- Top with sparkling water and garnish with a sprig of mint.
- Enjoy!
HOW TO MAKE STEVIA SIMPLE SYRUP
- Bring one cup of water to a boil.
- Add 2 tablespoons of stevia and let it simmer at low heat until stevia has completely dissolved.
- Remove from heat.
- Let it cool at room temperature before using, refrigerate the rest.
