January Low Carb Cocktail: John Collins ๐ŸŠ

I’d like to officially welcome you to the first official cocktail of my 2020 Monthly Low Carb Cocktail series #CupofOjCocktails on CupofOj.com! Each month I will feature a new low carb recipe featuring your favorite alcohol, garnishes, and more โ€” with a twist! Each of the recipes will be tweaked to lower the sugar content of the drink. Whether that be making my own sugar-free simple syrup, ingredient swapping, or shaking things up (literally) to create an enjoyable beverage, I hope you find these recipes to your liking โ€” no insulin required!

Without further ado, I’d like to introduce to you my cocktail creation for January…

Low Carb John Collins ~

So if you’re familiar with a John Collins, you know that it’s essentially a whiskey sour with club soda, but they gave it a normal guy name instead (it’s wild how much club soda can change an identity). I also topped it off with an orange slice garnish because it’s on brand and looks like one snazzy cocktail.

Whiskey sours generally have simple syrup in the recipe, which contains anywhere from 15 -20g of carbohydrates per ounce. In this recipe, I made my own simple syrup using stevia to cut out those extra carbs in this cocktail and felt like a true diabetic MacGyver in the process.

ingredients

  • 1 1/2 ounces whiskey (bourbon)
  • 1 ounce lemon (juice of)
  • 1/2 ounce stevia simple syrup
  • 2โ€‹ ounces โ€‹club soda
  • Garnish: โ€‹orange slice

how to make stevia simple syrup

  1. Bring one cup of water to a boil.
  2. Add 2 tablespoons of stevia and let it simmer at low heat until stevia has completely dissolved.
  3. Remove from heat.
  4. Let it cool at room temperature before using, refrigerate the rest.

(If I am lazy I will just microwave a glass of water…. works just as well lol)

instructions

  1. Pour the bourbon, lemon juice, and stevia simple syrup into a glass filled with ice cubes.
  2. Stir.
  3. Top with club soda.
  4. Garnish with an orange slice. (cute!)
